Sugar Creek Cake! The fabulous Gina Scalera of Joseph Beth Booksellers in Lexington, KY invented this apple-y treat in honor of Sugar Creek.

Ingredients

• 1 pkg. White Cake Mix (I use Duncan Hines)
• 3 lg. Eggs
• 1/2 c. Water1/3 c. Vegetable Oil (I use Canola)
• 2 lg. Apples, peeled & grated (I use Granny Smith)
• Topping
• 1/2 c. Brown Sugar, firmly packed
• Cinnamon to taste
• 1/2c. mini Chocolate Chips
• 1 TBSP. Butter, melted

Directions

Preheat oven to 350 (325 if your pan is glass). In a large bowl combine the cake mix, eggs, water and oil. Stir in apples, blending completely. Spread batter in a 13"x9" pan and set aside.
Combine topping ingredients and sprinkle evenly over cake batter. Bake 35 to 45 min., until lightly browned and beginning to pull away from sides of pan. Cool and cut into pieces. Cake freezes very well.
